Pastry Chef Tip #19 ~ Before you toss that "worthless" roll of plastic wrap

Frustrated with plastic wrap or cling wrap that doesn't cling?  Or you don't have ANY idea what "skin on" is....

We all have a bowl that plastic wrap doesn't stick to.  Try this simple trick:

  1. Wet your finger with just a few drops of water.
  2. Run the wet finger around the rim of the bowl.
  3. Secure with the plastic wrap. 
  4. Say Viola or Happy Dance!

Is your plastic wrap stuck together on the roll and you are ready to trash it?  Solution - Store the roll in the refrigerator or freezer.

What in the world is "skin on"?  Skin on simply means putting the plastic wrap in direct contact with the food.  This is done to prevent a skin from forming on the surface of the food.  It keeps out air and also any bacteria from forming when an item needs to be cooled quickly.  (This is most commonly used when making pastry creams that need to go from hot to chilled very quickly).
